Thai Basil Pork with Green Beans

A fast, punchy stir-fry of pork mince, green beans and basil with a hit of chilli and lime.

SHOPPING LIST

  • pork mince500g
  • green beans250g
  • garlic4 cloves
  • red chilli1
  • soy sauce2 tbsp
  • fish sauce1 tbsp
  • lime1
  • basil20g
  • vegetable oil1 tbsp
  • long grain rice300g

METHOD

  1. 1Cook the rice in salted boiling water for 12 minutes, then drain and keep warm.
  2. 2Trim the green beans and cut them into short lengths.
  3. 3Heat the oil in a wok and fry the garlic and chilli for 30 seconds.
  4. 4Add the pork mince and cook for 6 minutes until browned with no pink left.
  5. 5Add the green beans and stir-fry for 4 minutes until tender but still crisp.
  6. 6Stir in the soy sauce, fish sauce and lime juice.
  7. 7Tear in the basil and toss until just wilted.
  8. 8Serve the pork stir-fry over the warm rice.
