Sweet and Sour Chicken with Rice

Pineapple and pepper chunks in a tangy sauce over crispy fried chicken breast pieces.

  • cornflour5 tbsp
  • egg1
  • pineapple chunks in juice1 tin
  • red pepper1
  • green pepper1
  • onion1
  • tomato ketchup4 tbsp
  • white wine vinegar2 tbsp
  • brown sugar3 tbsp
  • soy sauce1 tbsp
  • long grain rice300g
  • vegetable oil3 tbsp

METHOD

  1. 1Cut the chicken into bite-sized chunks and coat in beaten egg and cornflour.
  2. 2Heat oil in a deep pan and fry the chicken pieces until golden and cooked through, then set aside.
  3. 3Chop the peppers and onion, and drain the pineapple, reserving the juice.
  4. 4Mix ketchup, vinegar, sugar, soy sauce and pineapple juice for the sauce.
  5. 5Stir-fry the peppers and onion for 4 minutes, then add the sauce and simmer for 3 minutes.
  6. 6Add the pineapple chunks and fried chicken, toss to coat, and heat through for 2 minutes.
  7. 7Cook the rice according to pack instructions, then serve the sweet and sour chicken over the rice.
