Steak Frites with Peppercorn Sauce
Pan-seared sirloin steak with crispy oven chips and a creamy, punchy peppercorn sauce.

- vegetable oil2 tbsp
- shallot1
- brandy2 tbsp
- beef stock cube1
- double cream150ml
- green peppercorns in brine2 tbsp

METHOD
1Preheat oven to 220°C.2Cut potatoes into thick chips, toss with oil and salt, spread on a baking tray.3Roast chips for 25-30 minutes, turning once, until golden and crisp.4Season steaks with salt and black pepper.5Heat a frying pan over high heat, add butter, sear steaks for 3 minutes each side for medium.6Remove steaks and rest on a warm plate.7In the same pan, soften finely chopped shallot for 2 minutes.8Add brandy and let bubble, then add crumbled stock cube, 100ml water, and crushed peppercorns, simmer for 3 minutes.9Stir in cream and simmer for 2 minutes until slightly thickened.10Serve each steak with a pile of chips and sauce poured over.
