Spicy Tomato and Courgette Tart

A puff pastry tart spread with spiced tomato paste, caramelised onion and courgette.

SHOPPING LIST

• puff pastry320g
• onion2
• courgette2
• tomato puree3 tbsp
• smoked paprika1 tsp
• chilli flakes1 tsp
• olive oil2 tbsp
• salt1 tsp

METHOD

1. 1Heat the oven to 200C and line a baking tray.
2. 2Slice the onions and courgettes thinly.
3. 3Heat the oil in a pan and cook the onions for 10 minutes until soft and golden.
4. 4Stir the tomato puree, paprika and chilli flakes into the onions and cook for 2 minutes.
5. 5Roll the pastry onto the tray and score a border around the edge.
6. 6Spread the spiced onion mix over the pastry and top with overlapping courgette slices.
7. 7Bake for 20 minutes until the pastry is golden and the courgette tender.
