Spaghetti Bolognese
A rich, slow-simmered beef sauce folded through spaghetti for a comforting midweek meal.

- chopped tomatoes2 tins
- tomato puree2 tbsp
- beef stock cube1
- dried oregano1 tsp
- olive oil2 tbsp
- salt1 tsp
- black pepper1 tsp
METHOD
1Heat the olive oil in a large pan over medium heat and fry the onion, carrot and celery for 5 minutes until softened.2Add the garlic and beef mince, breaking it up with a spoon, and cook until browned all over.3Stir in the tomato puree, oregano, stock cube and chopped tomatoes, then bring to a simmer.4Cook the sauce uncovered for 30 minutes, stirring occasionally, until thickened.5Meanwhile, cook the spaghetti in salted boiling water according to packet instructions until al dente.6Drain the spaghetti and toss with the sauce, seasoning with salt and pepper before serving.7Serve hot, with extra black pepper on top if desired.
