Smoked Paprika Chicken Pasta Bake

Pasta with chicken and peppers in a smoky tomato sauce, topped with cheese.

SHOPPING LIST

• penne pasta400g
• chicken breast fillets2
• red pepper1
• yellow pepper1
• chopped tomatoes1 tin
• smoked paprika1 tbsp
• garlic cloves2
• olive oil1 tbsp
• cheddar cheese100g

METHOD

1. 1Cook the penne in boiling salted water for 2 minutes less than the packet says, then drain.
2. 2Cut the chicken into strips and fry in olive oil with sliced peppers and crushed garlic.
3. 3Cook until the chicken is cooked through with no pink.
4. 4Add the chopped tomatoes and smoked paprika, simmer for 5 minutes.
5. 5Stir the pasta into the sauce and tip into a dish.
6. 6Grate the cheese over the top and bake at 200°C for 15 minutes until bubbling.
