Slow Cooker Sausage and Bean Casserole

A comforting one-pot of sausages, beans, and vegetables in a rich tomato gravy.

• chopped tomatoes400g
• mixed beans400g
• onion1
• carrot2
• chicken stock cube1
• dried mixed herbs1 tsp
• tomato puree1 tbsp
• vegetable oil1 tbsp
• salt1 tsp
• black pepper1 tsp

METHOD

1. 1Chop the onion and carrots into chunks.
2. 2Heat the oil in a frying pan and brown the sausages for 5 minutes, turning regularly.
3. 3Add the sausages, onion, and carrots to the slow cooker.
4. 4Pour in the chopped tomatoes, drained mixed beans, crumbled stock cube, mixed herbs, tomato puree, salt, and pepper.
5. 5Stir everything together, cover, and cook on low for 6 hours or high for 4 hours.
6. 6Serve hot.
