Slow Cooker BBQ Pulled Pork Jacket Potatoes
Tender, smoky pulled pork piled onto crispy baked potatoes with a tangy coleslaw.

- pork shoulder1.2kg
- brown sugar2 tbsp
- smoked paprika2 tsp
- garlic powder1 tsp
- onion powder1 tsp

- barbecue sauce200ml
- baking potatoes4
- white cabbage200g

- mayonnaise3 tbsp
- white wine vinegar1 tbsp
METHOD
1Mix the brown sugar, paprika, garlic powder, onion powder, salt, and pepper, then rub all over the pork shoulder.2Place the pork in the slow cooker and pour the barbecue sauce over the top.3Cover and cook on low for 8 hours until the pork shreds easily.4Shred the pork with two forks and mix with the sauce in the slow cooker.5Prick the potatoes and microwave for 10 minutes, then bake in a preheated oven at 200°C for 20 minutes until crisp.6Shred the cabbage and carrot, mix with mayonnaise and vinegar to make coleslaw.7Split the potatoes, fill with pulled pork, and top with coleslaw.
