Sausages with Mustard Mash and Gravy
Pork sausages on creamy mashed potatoes, topped with a rich onion gravy.

- milk100ml
- butter50g
- wholegrain mustard2 tbsp
- onion1
- plain flour1 tbsp
- beef stock cube1
- vegetable oil1 tbsp
- salt1 tsp
- black pepper1 tsp
METHOD
1Peel and chop the potatoes into even chunks, then boil in salted water for 15 minutes until tender.2While the potatoes cook, heat the oil in a frying pan and brown the sausages for 8 minutes, turning regularly.3Add the sliced onion to the sausages and cook for 5 minutes until softened.4Sprinkle the flour over the onions and stir, then add the stock cube dissolved in 300ml of hot water, stirring to make a gravy.5Simmer the gravy for 5 minutes until thickened, then season with salt and pepper.6Drain the potatoes and mash with the milk, butter and mustard until smooth.7Serve the sausages and gravy over the mash, hot.
