Sausage and Bean One-Pot

Hearty sausages simmered with mixed beans in a rich tomato sauce, served with crusty bread.

SHOPPING LIST

• pork sausages8
• mixed beans in water2 tins
• chopped tomatoes2 tins
• onion1
• garlic cloves2
• smoked paprika1 tsp
• vegetable stock cube1
• olive oil1 tbsp

METHOD

1. 1Heat the oil in a large pan and brown the sausages for 5 minutes, turning occasionally.
2. 2Add the chopped onion and garlic, and cook for 3 minutes until softened.
3. 3Stir in the smoked paprika and crumble in the stock cube.
4. 4Pour in the chopped tomatoes and mixed beans with their water.
5. 5Simmer for 25 minutes until the sausages are cooked through with no pink inside.
6. 6Serve hot in bowls with the sauce spooned over.
