Saag Paneer with Rice
Soft paneer cubes in a creamy, spiced spinach sauce, served with basmati rice.

- ground cumin1 tsp
- ground coriander1 tsp
- vegetable oil2 tbsp

METHOD
1Blanch the spinach in boiling water for 2 minutes, then drain and blend to a smooth puree.2Cut the paneer into cubes and set aside.3Heat the oil in a pan and fry the chopped onion for 5 minutes until soft.4Add the crushed garlic, grated ginger, and chopped tomatoes, and cook for 5 minutes until the tomatoes break down.5Stir in the spices and salt, and cook for 1 minute.6Add the spinach puree and cream, and simmer for 5 minutes.7Gently fold in the paneer cubes and cook for 5 minutes until warmed through.8Cook the rice according to the packet instructions and serve the saag paneer alongside.
