Prawn Fried Rice
A quick wok-fried rice with juicy prawns, peas, and egg, seasoned with soy and sesame.

METHOD
1Ensure the cooked rice is cold and separated (use day-old if possible).2Beat the eggs with a pinch of salt and scramble in a wok with a little oil, then set aside.3Finely chop the garlic and ginger, slice the spring onions, and set aside the green parts.4Heat vegetable oil in the wok and stir-fry the prawns for 2-3 minutes until pink and cooked through, then remove.5Add garlic, ginger, and white spring onion parts to the wok, fry for 1 minute.6Add the cold rice and peas, stir-fry for 5 minutes until hot and slightly toasted.7Return the prawns and scrambled egg, add soy sauce and sesame oil, toss well.8Scatter with green spring onion tops and serve immediately.
