Pork and Apple Cider Traybake
A simple traybake of pork chops, fennel and potatoes cooked in a tangy cider and mustard sauce.

- baby potatoes600g
- fennel bulb1
- apple1
- dry cider200ml
- wholegrain mustard1 tbsp
- olive oil2 tbsp
- thyme5g
- chicken stock cube1
METHOD
1Preheat the oven to 200°C (fan).2Halve the baby potatoes and slice the fennel and apple into wedges.3Toss the potatoes, fennel and apple with olive oil and thyme in a large roasting tray, season with salt and pepper.4Roast for 20 minutes.5Season the pork chops and nestle them among the vegetables.6Mix the cider, mustard and crumbled stock cube, then pour around the pork.7Roast for a further 25 minutes until the pork is cooked through with no pink and the potatoes are tender.8Rest for 5 minutes before serving.
