Lemon Basa with Buttery Mash and Pesto
Flaky white fish over creamy lemon mash with a swirl of green pesto and peas.

- potatoes1kg
- butter50g
- lemon1
- green pesto3 tbsp
- frozen peas200g
- olive oil1 tbsp
- salt1 tsp
- pepper1 tsp
METHOD
1Peel and chop the potatoes, then boil in salted water for 15 minutes until tender.2Drain the potatoes, add butter and the zest and juice of the lemon, then mash until smooth.3Boil the peas for 3 minutes and drain.4Pat the basa fillets dry and season both sides with salt and pepper.5Heat the olive oil in a frying pan and cook the fish for 4 minutes each side until opaque and flaking.6Spoon the mash onto plates, top with the fish and scatter the peas alongside.7Drizzle the pesto over the fish and serve straight away.
