Lamb Kofta Wraps with Tzatziki

Juicy spiced lamb koftas wrapped in warm flatbreads with cool, herby tzatziki and crisp salad.

METHOD

  1. 1Grate the cucumber and squeeze out excess water, then mix with yogurt, chopped mint, and a pinch of salt to make tzatziki.
  2. 2Finely chop half the red onion and crush 1 garlic clove, mix into the lamb mince with cumin, coriander, cayenne, salt, and pepper.
  3. 3Shape the lamb mixture into 8 oval koftas and thread onto skewers if using.
  4. 4Heat oil in a frying pan over medium-high heat and cook koftas for 10-12 minutes, turning, until browned and cooked through with no pink inside.
  5. 5Warm the flatbreads in a dry pan or microwave for 30 seconds.
  6. 6Slice the remaining onion, tomato, and lettuce.
  7. 7Spread tzatziki over each flatbread, add salad, and place two koftas per wrap, then roll up and serve.
