Jacket Potato with Chilli Con Carne

Baked potatoes with a rich, spicy beef chilli and a dollop of soured cream.

SHOPPING LIST

• baking potatoes4
• beef mince500g
• onion1
• kidney beans1 tin
• chopped tomatoes1 tin
• chilli powder2 tsp
• ground cumin1 tsp
• vegetable oil1 tbsp
• soured cream4 tbsp

METHOD

1. 1Preheat the oven to 200°C and prick the potatoes with a fork.
2. 2Bake the potatoes for 50-60 minutes until soft inside.
3. 3Meanwhile, heat the oil in a pan and cook the chopped onion for 5 minutes.
4. 4Add the beef mince and cook until browned all over.
5. 5Stir in the chilli powder, cumin, chopped tomatoes and kidney beans.
6. 6Simmer for 20 minutes until thick and rich.
7. 7Split the baked potatoes and spoon the chilli over each one.
8. 8Top with a spoonful of soured cream.
