Harissa Lamb Meatballs with Couscous
Spicy lamb meatballs in a harissa tomato sauce, served over light couscous.

- harissa paste3 tbsp
- breadcrumbs50g
- egg1
- onion1
- garlic cloves2
- chopped tomatoes1 tin
- tomato puree1 tbsp
- ground cumin1 tsp
- couscous300g
- vegetable stock cube1
- olive oil2 tbsp
- salt1 tsp
METHOD
1Mix the lamb mince with 1 tbsp harissa, breadcrumbs, egg and salt, then shape into 16 meatballs.2Heat the olive oil in a large pan and brown the meatballs for 5 minutes, turning, then set aside.3In the same pan, fry the chopped onion and crushed garlic for 3 minutes.4Add the remaining harissa, tomato puree, cumin and chopped tomatoes, then simmer for 5 minutes.5Return the meatballs to the sauce and cook for 10 minutes until cooked through.6Meanwhile, pour boiling water over the couscous with the crumbled stock cube and leave for 5 minutes, then fluff with a fork.7Serve the meatballs and sauce over the couscous.
