Crispy chicken thighs are smothered in a rich garlic butter sauce, served with golden potato wedges.

METHOD
1Preheat the oven to 200°C (fan 180°C).
2Cut the potatoes into wedges and toss with 1 tbsp of the oil, salt, and pepper on a baking tray.
3Roast the wedges for 30 minutes, turning halfway, until golden and crisp.
4Heat the remaining oil in a frying pan over medium-high heat and cook the chicken thigh fillets for 8 minutes per side until cooked through with no pink.
5Meanwhile, melt the butter in a small saucepan and crush in the garlic cloves, cooking for 2 minutes until fragrant.
6Stir the dried parsley into the garlic butter and pour over the cooked chicken in the pan.
7Serve the garlic butter chicken alongside the wedges, spooning the sauce over.
