Croque Monsieur with Mixed Leaf Salad
Toasted ham and cheese sandwiches with a creamy béchamel, served with a simple crisp salad.

- white bread loaf8 slices
- butter50g
- plain flour2 tbsp
- milk300ml
- cheddar cheese150g
- gruyere cheese100g
- cooked ham slices8
- dijon mustard2 tsp
- mixed salad leaves150g
- olive oil1 tbsp
- red wine vinegar1 tbsp
- salt0.5 tsp
- black pepper0.5 tsp
METHOD
1Melt butter in a saucepan, stir in flour and cook for 1 minute.2Gradually whisk in milk, bring to a simmer until thickened.3Stir in grated cheddar and half the gruyere, season with salt and pepper, then set aside.4Spread a thin layer of dijon mustard on each bread slice.5Place a ham slice on 4 bread slices, top with the other bread slices.6Spread the cheese sauce over the top of each sandwich and sprinkle with remaining gruyere.7Place sandwiches on a baking tray and grill for 5-7 minutes until golden and bubbling.8Toss salad leaves with olive oil, vinegar, and a pinch of salt.9Serve each croque monsieur with a handful of salad on the side.
