Crispy Chilli Beef Noodles

Shredded beef is fried until crisp and tossed in a sticky sweet chilli sauce with peppers and noodles.

SHOPPING LIST

• beef sirloin steak400g
• cornflour4 tbsp
• egg noodles300g
• red pepper1
• green pepper1
• onion1
• garlic2 cloves
• chilli flakes1 tsp
• tomato ketchup3 tbsp
• soy sauce2 tbsp
• rice vinegar1 tbsp
• brown sugar2 tbsp
• vegetable oil4 tbsp

METHOD

1. 1Cut the beef into thin strips and toss with cornflour and a pinch of salt.
2. 2Heat the oil in a wok and fry the beef in batches until golden and crisp, then drain on kitchen paper.
3. 3Slice the peppers and onion, and mince the garlic.
4. 4In a bowl, mix ketchup, soy sauce, rice vinegar, sugar, chilli flakes and 2 tbsp water.
5. 5Stir-fry the peppers and onion for 3 minutes, then add the garlic for 1 minute.
6. 6Pour in the sauce and bubble for 2 minutes until thickened.
7. 7Cook the egg noodles according to pack instructions, then drain.
8. 8Add the crispy beef and noodles to the wok, toss everything together and serve hot.
