Cheesy Fish Pie
A comforting British classic with flaky fish in a creamy sauce under a golden cheesy mash topping.

- smoked haddock fillets200g
- whole milk500ml
- butter50g
- plain flour40g
- frozen peas150g
- potatoes800g
- cheddar cheese100g

METHOD
1Boil the potatoes in salted water until tender, then drain and mash with half the butter and a splash of milk.2Poach the cod and smoked haddock in the remaining milk with the bay leaf for 8 minutes until just cooked through.3Remove the fish from the milk, flake into chunks, and strain the milk into a jug.4Melt the remaining butter in a pan, stir in the flour and cook for 1 minute.5Gradually whisk in the reserved milk and simmer until thick, then season with salt and pepper.6Fold the flaked fish and peas into the sauce, then transfer to a baking dish.7Top with the mashed potato, scatter over the grated cheddar, and bake at 200°C for 20 minutes until golden and bubbling.
