Beef Pho-Style Noodle Soup
A deeply savoury beef broth with rice noodles, rare beef slices and fresh herbs.

- beef sirloin steak400g
- rice noodles300g
- beef stock1.5 litres
- onion1
- ginger40g
- star anise3
- cinnamon stick1
- fish sauce2 tbsp
- brown sugar1 tsp
- spring onions4
- fresh coriander1 bunch
- bean sprouts200g
METHOD
1Slice the onion and ginger, and dry-toast them in a large pot for 2 minutes.2Add the star anise, cinnamon stick, beef stock and 500ml water to the pot.3Simmer the broth for 30 minutes, then strain and return to the pot.4Stir in the fish sauce and brown sugar.5Cook the rice noodles according to the packet instructions and divide between bowls.6Freeze the beef sirloin steak for 15 minutes, then slice it very thinly.7Place the raw beef slices on top of the noodles.8Pour the hot broth over the beef and noodles, so the beef cooks gently in the heat.9Top with sliced spring onions, coriander leaves and bean sprouts.
